Plantain seeds

So, I want to know the proper way to use plantain seeds. I harvested a bunch of the seed stalks from my backyard yesterday and dried them in my dehydrator. This morning I stripped the seeds from the stalks and I have about 2 cups of the dried seeds in a glass jar. When I was stripping the seeds, I noticed that some tiny black seeds were separating from the husks. I assume we are meant to use them husk and all? Is this how Susun Weed uses them in her oatmeal?
